This South American plant produces a grain-like seed that has been used by humans for over 6000 years. Quinoa's protein contains a full set of human essential amino acids. It is is gluten-free and is a good source of dietary fiber, phosphorus, magnesium and iron. With an oil content approaching 6% and protein around 15% this is as nutritious as it is tasty. Under optimum conditions it can sprout overnight. When young it looks and grows like it's relative, the weed, lamb's quarters.
